Baked Camembert

Monday night indulgence. Baked camembert. Molten creamy cheese infused with garlic and rosemary. If you haven't tried it, stick a few slices of raw garlic and sprigs of rosemary into a camembert round. If the wooden case edges are not completely sealed (ie, sides connected with staples), wrap the insides with foil to make sure nothing leaks out while baking.

Place on a foil lined tray and stick in the oven at 180 degrees for 20 mins. Remove the rosemary springs. Flip off the crust "lid" on top and dip bread, crackers, carrot sticks, steamed broccoli (my fave). The rind itself is delicious too. Don't feel guilty if you eat a whole round to yourself. It's divine!
